Classic Caprese Recipes from Napoli
Neopolitan cuisine is greatly influenced by the many cultures that ruled the shores of Italy--Greek, French, Spanish. However, it developed into its own characterized by the use of rich flavor and available ingredients. Fish and seafood, along with fresh fruits and vegetables, provide the basis for the Mediterranean dishes of Capri. |
One of the greatest pleasures is dining al fresco. Perfect for summer entertaining, a simple and delicious dish adapted from a recipe from Capri.
Pasta Caprese
1 1/2 lbs fresh, ripe tomatoes, chopped
8 oz. fresh mozzarella cheese, 1/2 inch cubes
4 tbs. extra virgin olive oil
1 tsp. red wine vinegar
1/2 cup fresh basil leaves, shredded
salt & freshly ground pepper
1 lb penne pasta
2 cloves finely chopped garlic cloves
peperoncino (hot pepper)
Mix mozzarella, tomatoes, oil, vinegar, garlic, peperoncino in deep bowl. Season with salt and freshly ground pepper to taste. Cover and allow to sit at room temperature approx. 1 hour. Add basil and toss well. Cook pasta until al dente. Drain. Pour tomato mixture over and toss. Pour into bowl. Serve with crusty bread and enjoy.

Amalfatini
1 1/4 oz vodka 3/4 oz limoncello 1/2 oz peachtree schnapps 3/4 oz triple sec 1 1/2 oz white cranberry juice
1. Add ingredients to shaker with ice. 2. Shake and strain into a chilled cocktail glass. 3. Garnish with fresh peach or lemon wedge. |
Summer Cocktails
The origin of limoncello is shrouded in legend. Taken as an aperitif or digestive, one thing is certain, the makings of limoncello include lemon peel, alcohol and sugar.
Limonata (Adult Lemonade)
2 oz. citrus vodka 1/2 oz limoncello 1 oz fresh lemon juice 3/4 oz simple syrup 1 lemon wedge
1. Add ingredients to a shaker with ice. 2. Shake and strain into a chilled cocktail glass. 3. Garnish with lemon wedge
Limonce' Limon Blush
1 oz limoncello 3 oz lemonade 1/2 oz cranberry juice 1/2 oz soda water 1 lemon wedge
1 Add ingredients with the exception of the soda to a shaker with ice. 2. Shake and strain into tall glass filled with ice and top with soda. 3. Garnish with lemon wedge.
